The work was carried out with the purpose of evaluating the catalytic activity of peroxidase, which is present in chicken and guinea pig liver by adding 0.1 mL of lemon verbena homogenate. We worked with 1g for all samples. The peroxidase activity in lemon verbena varies from 42.177 to 69.268 mM/min; for chicken liver from 45.066 to 42.411 mM/min and for guinea pig liver from 61.083 to 41.259 mM/min with the addition of 0.1 mL of lemon verbena extract, which indicates that it has an antioxidant effect.
